Raspberry Chia Jam

1/2 cup water 

2.5 cups frozen raspberries (you can use mixed berries or any berry)

1/4-1/3 cup golden monk fruit or sweetener of choice 

Juice of one large lime  

2 tbsp chia seeds

Add the blueberries, monk fruit, lime and water to a small sauce pan. Bring to a strong simmer and reduce the heat to medium-low and let simmer uncovered for 15-20 min. 

Turn the heat off and blend it with an immersion blender (you can skip this part if you like it with fruit pieces, my kids prefer it smoother). Transfer to a glass jar and mix in the chia seeds, let cool. Enjoy!
